What cheese is good?
I like Monterey Jack and Brie. Provolone and American are boring. I hate bleu. I like the name “drunken goat cheese.” Any recommendations?

good nibbling cheeses: piave and to a lesser extent extra aged gouda (rembrandt brand is nice). they work well as grated cheese too.

At the risk of sounding unexotic, Mozzarella always pleases. It works wonders with tomato and bagels. I disagree with your comment about American cheese. It is the key to making a grilled cheese sandwich without looking like an asshole.

St. André is a pretty good brie. I like Gruyère, but it is a bit strong for some. It tastes like Switzerland. You can’t go wrong with a good Parmesan. Asiago is tasty and a bit exotic on sandwiches. Edam is a nice mild cheese. Fresh Mozzarella (aka Bocconcini) is awesome.
You can get some awesome cheeses from the cheese vendors at the Union Square market. Just go and ask to sample, and ask what they recommend. You can’t go wrong. Actually, just go to Whole Foods and talk to the people behind their cheese counter. They have a wide variety, and in my experience the people there know their stuff.

Double Gloucester
Havarti
Huntsman (double gloucester layered with blue stilton)
and most soft goat’s milk cheese
Last week I was at a party where someone brought this awesome dish that was just a huge chunk of melted brie with cranberries and slivered almonds, but normally I don’t like brie that much.

Try Paneer. That is what is usually served at Indian restaurants under “Cheese and Peas”. Although many mistake it for tofu. Don’t know why though. Tofu is nothing like Paneer.
